If you are visiting Jinju, you must visit Hayeonok, a famous restaurant in Jinju.
It is said that Jinju naengmyeon uses buckwheat in a ratio of about 7:3. Unlike other naengmyeon, Jinju naengmyeon does not use beef as the broth, but mainly uses dried pollack, anchovies, mussels, clams, and dried octopus, and each household uses a variety of dried fish. One unique way to make broth in the traditional way is to add heated iron during the boiling process for several days. This is said to eliminate the fishy smell characteristic of seafood broth, but this method is not used much these days. Instead, dried shrimp, red shrimp, pollack head, dried pollack, anchovies, clams, and kelp are used to make seafood broth.
The naengmyeon is served generously in a very large bowl. There are also many meat toppings. The cold broth is rich and refreshing, so it is comforting. The broth is neither too salty nor too weak, and it is a very rich and delicious broth. In addition to meat, anchovies and kelp are also included in the broth, so you can feel the refreshing taste.
