Opened in 1966, Myeongdong Gyoja is a family-run restaurant specializing in kalguksu that adheres to traditional recipes. Although the menu items are limited, dumplings and kalguksu are the signature menu items that have made this place known to the public for a long time. Thanks to the simple service, interior, and reasonable prices, there is always a line of customers outside Myeongdong Gyoja. When it first opened, the menu only had kalguksu, but in the 1970s, machines were imported from Japan to add various menus, and in keeping with the times, kongguksu and dumplings were also introduced as menus, and as of 2023, there are a total of four menus: kalguksu, dumplings, bibim guksu, and kongguksu. Myeongdong Gyoja focuses on preserving the unchanging taste while maintaining the family-run style. The secret to the taste of Myeongdong Gyoja is that they stick to the basic recipe and purchase the best and freshest ingredients every day based on the belief that 'the taste of cooking is sincerity ahead of science.'
