Busan
Pork soup is the soul food of Busan. Many historic restaurants here gained fame by providing affordable, hearty meals to refugees during the Korean War. Sinchang Gukbap (est. 1948): Located in Bupyeong-dong, it is famous for its clear, deep broth, which differs from the more common milky versions. It has maintained its original recipe for over 75 years. Milmyeon is a dish unique to Busan, created when refugees used wheat flour (distributed by US aid) instead of buckwheat to make cold noodles. Naeho Naengmyeon (est. 1919): This is the oldest Milmyeon restaurant in Busan, spanning four generations. Originally started in North Korea and moved to Busan during the war, it is considered the birthplace of Busan-style Milmyeon. Baekhwa Yang-gopchang (est. 1952): Located in the Jagalchi Market area, this place offers a unique atmosphere where multiple vendors operate under one roof, serving grilled tripe. It is a "living museum" of Busan’s postwar dining culture. Dongnae Halmae Pajeon (est. 1940s): This restaurant specializes in Dongnae Pajeon (green onion pancake). It was historically served to kings and is known for its soft, moist texture using high-quality seafood and local green onions.
